Garlicky Seafood Zucchini Boats with Shrimp 🍤🥒
This seafood dish nestles juicy shrimp into tender zucchini with garlic, paprika, and a bubbling cheese finish.

🛒Ingredients :
• 3 medium zucchinis, halved lengthwise
• 1 lb shrimp, peeled and deveined
• 1 tbsp olive oil
• 3 cloves garlic, minced
• 1 cup shredded mozzarella cheese
• 1/4 cup grated Parmesan cheese
• 1/2 tsp paprika
• Salt and black pepper, to taste
• 1 tbsp fresh parsley, chopped
• Lemon wedges, for serving

1. Shape the Zucchini
Scoop the centers from the zucchini halves to form sturdy boats, then arrange them in a baking dish.
2. Sauté the Shrimp
Warm the olive oil in a skillet over medium heat. Add the shrimp, garlic, paprika, salt, and black pepper, then cook for about 3 minutes until the shrimp are pink and just cooked through.
3. Fill the Boats
Divide the cooked shrimp among the hollowed zucchini halves, arranging the pieces evenly from end to end.
4. Melt the Cheese
Top each boat with mozzarella and Parmesan. Bake at 375°F for 15 to 18 minutes, until the zucchini is tender and the cheese is melted with light golden color.
5. Add the Fresh Finish
Scatter parsley over the baked zucchini boats and serve them warm with lemon wedges alongside.
