French Onion Meatloaf with Gruyere Gravy
Juicy meatloaf topped with caramelized onions and rich Gruyère gravy, classic comfort food with a French onion twist.
Ingredients
900 g ground beef
1 cup breadcrumbs
2 eggs
½ cup milk
1 tbsp Worcestershire sauce
2 garlic cloves, minced
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
2 large onions, sliced
2 tbsp butter
1 tbsp olive oil
2 cups beef broth
2 tbsp flour
1 tsp Dijon mustard
1 cup shredded Gruyère cheese
2 tbsp chopped parsley
Instructions
Preheat oven to 190°C. Lightly grease a loaf pan or line a baking sheet with parchment.
Melt butter with olive oil in a skillet over medium heat. Add onions and cook 15–20 minutes, stirring often, until soft and golden. Set half aside for the gravy.
In a large bowl combine beef, breadcrumbs, eggs, milk, Worcestershire, garlic, salt, pepper, thyme, and half the caramelized onions.
Mix gently just until combined; overmixing can make the meatloaf tough.
Shape into a loaf and place in the prepared pan.
Bake for 45–55 minutes, until the center reaches 71°C.
During the last 10 minutes, sprinkle ½ cup Gruyère over the meatloaf and return to the oven until melted.
For the gravy, return reserved onions to the skillet. Sprinkle in flour and cook 1 minute.
Slowly whisk in beef broth and Dijon. Simmer 4–5 minutes, stirring until thickened.
Add remaining Gruyère and stir over low heat until smooth. Add a splash of broth if too thick.
Remove meatloaf from oven and rest 10 minutes before slicing.
Spoon warm onion-Gruyère gravy over each slice, garnish with parsley, and serve with mashed potatoes or green beans. Refrigerate leftovers up to 3 days.
