Pastina Soup (Classic Italian Penicillin Soup) ๐ฒโจ
Ingredients:
6 cups (1.4 L) chicken or vegetable broth
1.5 cups pastina pasta (or acini di pepe, orzo, or tiny stars)
1 small carrot, finely grated or diced
1 stalk celery, finely diced (optional)
1 tbsp olive oil or butter
Salt and black pepper, to taste
Grated Parmesan cheese, for serving
Fresh parsley, chopped (for garnish)
Instructions:
In a large pot, heat olive oil or butter and sautรฉ the carrot (and celery if using) for 2โ3 minutes.
Add the broth and bring to a boil.
Stir in the pastina pasta and cook until tender (about 6โ8 minutes).
Season with salt and pepper to taste.
Serve hot, topped with grated Parmesan and fresh parsley.
