Made with a flavorful garlic butter base, seafood broth, and a silky cream sauce, this easy seafood soup is perfect for cozy family dinners, special occasions, or whenever you crave restaurant style seafood at home.
Ingredients:
1/2 lb shrimp, peeled and deveined
1/2 lb lump crab meat, picked over
3 tablespoons butter
1 small onion, finely chopped
2 garlic cloves, minced
2 tablespoons all purpose flour
1 tablespoon tomato paste
3 cups seafood stock or chicken broth
1 cup heavy cream
1/2 cup half and half
1 teaspoon Old Bay seasoning
Salt to taste
Black pepper to taste
1 pinch cayenne pepper, optional
1 tablespoon fresh parsley, chopped
Rustic bread for dipping
Directions:
1. Prepare all the ingredients before cooking. Peel and devein the shrimp, check the lump crab meat for any remaining shells, finely chop the onion, mince the garlic, and chop the fresh parsley. Measure the remaining ingredients and set them aside.
2. Place a large heavy bottomed pot over medium heat. Add the butter and allow it to melt completely without browning.
3. Add the finely chopped onion to the melted butter. Cook for 3 to 4 minutes, stirring occasionally, until the onion becomes soft and translucent.
4. Add the minced garlic and stir continuously for approximately 20 to 30 seconds until fragrant. Avoid letting the garlic burn.
5. Sprinkle the all purpose flour evenly over the onion and garlic mixture. Stir continuously for 1 to 2 minutes until the flour is fully incorporated and forms a smooth, lightly golden roux.
6. Add the tomato paste and stir for approximately 30 seconds, allowing it to blend thoroughly with the butter, flour, onion, and garlic mixture.
7. Slowly pour the seafood stock or chicken broth into the pot while whisking constantly. Continue whisking until the liquid is fully incorporated and the bisque base becomes smooth without lumps.
8. Increase the heat slightly and bring the mixture to a gentle simmer. Cook for 8 to 10 minutes, stirring occasionally, until the broth begins to thicken and the flavors develop.
9. Reduce the heat to low. Slowly stir in the heavy cream and half and half, mixing gently until the bisque becomes rich, creamy, and smooth.
10. Keep the heat low and avoid bringing the soup to a rapid boil, as excessive heat can cause the cream to separate.
11. Add the Old Bay seasoning, salt, black pepper, and optional cayenne pepper. Stir thoroughly until the seasonings are evenly distributed throughout the creamy broth.
12. Add the peeled and deveined shrimp to the gently simmering bisque. Cook for approximately 2 to 3 minutes, stirring occasionally, until the shrimp turn pink, opaque, and fully cooked.
13. Gently fold the lump crab meat into the soup, taking care not to break apart the larger pieces. Continue cooking for another 1 to 2 minutes until the crab meat is heated through.
14. Stir in the freshly chopped parsley and taste the bisque. Adjust the salt, black pepper, or Old Bay seasoning if necessary.
15. If the bisque is too thick, add a small amount of warm seafood stock or chicken broth and stir until the desired consistency is reached.
16. Remove the pot from the heat and allow the bisque to rest for approximately 1 minute before serving.
17. Ladle the Creamy Seafood Bisque Soup into individual serving bowls, distributing the shrimp and crab meat evenly.
18. Garnish with additional fresh parsley if desired and serve immediately with warm rustic bread for dipping.
