🧀 Cheesy Chicken & Vegetable Bake
Ingredients
2 lb (900 g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 large red bell pepper, sliced
1 large green bell pepper, sliced
2 medium tomatoes, cut into chunks
1 medium onion, sliced
2–3 cloves garlic, minced
2 cups shredded mozzarella cheese
½ cup shredded cheddar cheese
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon black pepper
1 teaspoon salt
½ teaspoon chili flakes, optional
2 tablespoons tomato paste or ½ cup tomato sauce
👨‍🍳 Instructions

1. Prepare the chicken
Cut the chicken into small, bite-sized pieces and place them in a large bowl.

2. Season the chicken
Add olive oil, paprika, Italian seasoning, garlic powder, onion powder, salt, black pepper, and chili flakes. Mix thoroughly until every piece of chicken is well coated.

3. Add the vegetables
Add the sliced red bell pepper, green bell pepper, onion, and tomatoes. Add the minced garlic and tomato paste or tomato sauce. Mix everything together.

4. Transfer to the baking dish
Spread the seasoned chicken and vegetables evenly into a large oven-safe baking dish. Try to keep everything in a single, even layer.

5. Add the cheese
Cover the top generously with shredded mozzarella and cheddar cheese. Make sure the cheese is spread evenly across the entire dish.

6. Bake
Preheat the oven to 400°F (200°C). Bake for approximately 30–40 minutes, or until the chicken is fully cooked, the vegetables are tender, and the cheese is melted and beautifully golden brown.

For food safety, the thickest pieces of chicken should reach 165°F (74°C) internally.

7. Make it extra golden
For a more browned, bubbly cheese topping, switch to the broiler/grill setting for the final 1–3 minutes. Watch it carefully so the cheese doesn't burn.

8. Rest and serve
Remove from the oven and let it rest for about 5 minutes. Serve hot while the cheese is still melted and stretchy.

¾ cup unsweetened cocoa powder
1 can (12 oz / 354 ml) evaporated milk
½ cup unsalted butter
2 cups semi-sweet chocolate chips
1 tsp vanilla extract
1 cup chopped walnuts or pecans
¼ tsp salt
👩‍🍳 Instructions

1. Prepare the pan
Line a 9×13-inch rectangular baking pan with parchment paper, leaving a little extra paper hanging over the sides. Lightly grease the parchment with butter.

2. Combine the dry ingredients
In a medium saucepan, whisk together the sugar, cocoa powder, and salt until evenly mixed.

3. Add milk and butter
Pour in the evaporated milk and add the butter. Place the saucepan over medium heat and stir continuously until the butter melts and the mixture becomes smooth.

4. Cook the fudge mixture
Bring the mixture to a gentle boil while stirring constantly. Continue cooking for about 5–7 minutes, until it thickens slightly. If using a candy thermometer, aim for about 234°F (112°C).

5. Add chocolate
Remove the saucepan from the heat. Immediately add the chocolate chips and let them sit for about 1 minute. Stir until completely melted and silky smooth.

6. Add vanilla and nuts
Stir in the vanilla extract and chopped walnuts or pecans. Mix until the nuts are evenly distributed throughout the chocolate.

7. Pour into the pan
Immediately pour the hot fudge into the prepared parchment-lined pan. Use a spatula to spread it evenly into all four corners and smooth the top.

8. Let it set
Allow the fudge to cool at room temperature for about 1 hour, then refrigerate for another 1–2 hours until completely firm.

9. Cut into squares
Lift the entire fudge slab out using the parchment paper. Place it on a cutting board and use a sharp knife to cut it into small squares.

For the cabbage rolls:

1 large green cabbage
1 lb (450 g) ground beef
1 cup cooked white rice
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
1 tsp paprika
1 tsp Italian seasoning

For the tomato sauce:

2 cans (15 oz each) tomato sauce
1 can (14.5 oz) diced tomatoes
1 tbsp tomato paste
1 tsp sugar
1 tsp salt
½ tsp black pepper
½ cup water or beef broth
👩‍🍳 Instructions

1. Soften the cabbage
Bring a large pot of water to a boil. Carefully place the whole cabbage into the water. As the leaves soften, gently remove them one at a time with tongs. Set the leaves aside to cool.

2. Prepare the filling
In a large bowl, combine the ground beef, cooked rice, chopped onion, minced garlic, salt, black pepper, paprika, and Italian seasoning. Mix until everything is evenly combined.

3. Make the sauce
In a separate bowl, mix together the tomato sauce, diced tomatoes, tomato paste, sugar, salt, black pepper, and water or beef broth.

4. Roll the cabbage
Place one cabbage leaf flat on a work surface. Put about 2–3 tablespoons of filling near the bottom of the leaf. Fold the sides inward and roll it tightly like a burrito.

Repeat with the remaining leaves and filling.

5. Arrange the rolls
