Warming up dry pastries can be made easy with the latest AMC Fermentation Window setting (aka 40°C).

Here, I warmed my Winter Melon Wife Biscuits (老婆饼) from Hang Heong, Hong Kong at a safer temperature of 40°C, helps to preserve better texture and prevent excessive or uneven heat in pastries, that may cause dryness.

Grouper Fish Bones Broth cooked with AMC 20cm Secuquick Lid in 4.0liter Pot. When cooked on "Turbo" mode (at temperature range between 108°C to 118°C) + 20 minutes, all goodness from bones were drawn into the liquid, making it rich, sticky, creamy broth.

"Solid" collagen can be seen/witnessed when broth is kept chilled in refrigerated after a day.

Broth made will turn liquid again when reheated. Any ingredients of choice can be added to make it a more wholesome.

Just 500grams of Grouper Fish Bones, 1 inch (thumb size) Ginger, 3 cloves of smashed Garlic and 1.5 liters water.
