Loaded 7-Layer Salad with Bacon, Cheddar & Creamy Dressing
A colorful, creamy, crunchy 7-layer salad loaded with crisp lettuce, cucumber, sweet corn, eggs, crispy bacon, cheddar cheese, and green onions. Perfect for potlucks, family dinners, BBQs, and make-ahead lunches! 😍
🛒 Ingredients
Serves 8–10
For the Salad Layers
8 cups chopped romaine or iceberg lettuce
1 large cucumber, diced
2 cups sweet corn, drained if using canned
6 large hard-boiled eggs, chopped
8 slices bacon, cooked until crispy and crumbled
1½ cups shredded sharp cheddar cheese
½ cup green onions, sliced
For the Creamy Dressing
1 cup mayonnaise
½ cup sour cream
1 tbsp Dijon mustard
1 tbsp lemon juice
1 tsp garlic powder
½ tsp onion powder
½ tsp black pepper
½ tsp salt
1 tsp honey or sugar, optional

1. Prepare the ingredients:
Wash and dry the lettuce thoroughly. Chop the lettuce and cucumber, slice the green onions, chop the hard-boiled eggs, and cook the bacon until crisp. Crumble the bacon and set everything aside.
2. Make the dressing:
In a bowl, whisk together mayonnaise, sour cream, Dijon mustard, lemon juice, garlic powder, onion powder, black pepper, salt, and honey or sugar if using. Mix until smooth and creamy.
3. Start the first layer:
Spread the chopped lettuce evenly across the bottom of a large 9×13-inch glass baking dish.
4. Add the vegetables:
Layer the diced cucumber evenly over the lettuce, followed by the sweet corn.
5. Add the eggs:
Scatter the chopped hard-boiled eggs evenly over the corn.
6. Add the bacon:
Sprinkle the crispy crumbled bacon over the eggs.
7. Add the dressing:
Spread the creamy dressing evenly over the top, covering the salad as completely as possible. This helps keep the layers fresh.
8. Finish with cheese and onions:
Sprinkle the shredded cheddar cheese over the dressing, then finish with sliced green onions and a little extra bacon.
9. Chill:
Cover tightly and refrigerate for at least 2 hours before serving. For the best flavor, you can prepare it several hours ahead.
10. Serve:
Bring the salad to the table as a beautiful layered dish. Scoop straight down through all the layers so everyone gets a little bit of everything!
