Crunchy Japanese Long Fries with garlic mayo parmesan sauce 🍟

📝 Ingredients:
• 3–4 big potatoes
• 80–100 g cornstarch (about 6–7 tbsp)
• Seasoning :
• 1 tsp onion powder
• 1 tsp garlic powder
• 1 tsp dried parsley
• 1 tsp salt
• 2 tsp paprika powder
• 2 tsp black pepper
On top : parmesan, parlsey, and garlic mayo

👩🏻🍳 Instructions:
1. Peel and boil potatoes for 20–25 mins until soft.
2. Mash them until smooth.
3. Add all seasonings + cornstarch. Mix well.
4. Transfer into an ice bag (or piping bag).
5. Let it chill in the fridge for 30 mins.
6. Cut into long rectangle shapes, then cut in half.
7. Deep fry in hot oil until golden and crispy.
⚠️ Tip: If they break while frying, gently lift with a spatula to keep the shape!

GARLIC BUTTER CHICKEN BITES & SPICY CAJUN ALFREDO TWISTED PASTA 🍗🌶️

📋 Ingredients:

For the Chicken Bites:
1.5 lbs boneless, skinless chicken, cut into bite-sized pieces.
3 tbsp butter.
4 cloves garlic, minced.
1 tsp smoked paprika.
1 tsp Cajun seasoning.
Salt and black pepper, to taste.

For the Spicy Cajun Alfredo Pasta:
12 oz twisted pasta (fusilli or rotini).
2 tbsp butter.
3 cloves garlic, minced.
1.5 cups heavy cream.
1 cup grated Parmesan cheese.
½ cup shredded mozzarella cheese.
1 tsp Cajun seasoning (adjust to taste).
½ tsp crushed red pepper flakes (optional, for extra heat).
Salt and black pepper, to taste.
Fresh parsley, chopped (for garnish).

👩🍳 Directions:

1️⃣ Bring a large pot of salted water to a boil. Cook the twisted pasta according to package instructions until al dente. Drain and set aside.
2️⃣ In a large skillet, melt 3 tbsp butter over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the chicken bites, smoked paprika, Cajun seasoning, salt, and pepper. Cook, stirring occasionally, until chicken is golden brown and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
3️⃣ In the same skillet, melt 2 tbsp butter over medium heat. Add garlic and sauté for 1 minute. Slowly pour in heavy cream, stirring constantly. Bring to a gentle simmer, then whisk in Parmesan and mozzarella cheese until the sauce is thick and creamy. Stir in Cajun seasoning and crushed red pepper flakes, adjusting seasoning to your taste. Season with salt and pepper.
4️⃣ Add cooked twisted pasta to the skillet with the spicy Alfredo sauce. Toss well to coat all pasta with the creamy, cheesy, spicy sauce.
5️⃣ Return chicken bites to the skillet and toss gently to combine. Let everything warm together for 2 minutes. Serve hot, garnished with fresh chopped parsley.

Instant Pot Beef Pilaf also know as Plov, is a Russian dish which delicious & ever so comforting. This dish may be prepared on the stove top but it is super quick & easy to prepare in the Instant Pot.

Ingredients (Serves 5):
* 2 cups parboiled rice
* 3 tablespoons olive oil
* 1 large onion, chopped
* 1 kg steak (sirloin or chuck)
* 3 carrots
* 1 ½ tablespoons steak spice/seasoning
* 3 teaspoons salt
* 1 teaspoon cracked black pepper
* 1 teaspoon cumin (jeera) powder
* 1 teaspoon coriander (dhania) powder
* 1 teaspoon garlic powder
* 1 teaspoon chilli flakes
* 2 tablespoons chilli powder
* 2 teaspoons ginger & garlic paste
* 1 bay leaf
* 2 ½ cups water
* ½ head of garlic
* fresh or dried parsley for garnishing

Method:
* Rinse the rice until it runs clear & set aside.
* Press sauté on your Instant Pot, add in olive oil & onions. Mix & sauté until the onions are translucent.
* Peel & cut carrots into pieces & add to the Instant Pot. Add in cubed beef.
* Add in steak spice, salt, cracked black pepper, cumin powder, coriander powder, garlic powder, chilli flakes, chilli powder, ginger & garlic paste & a bay leaf.
* Mix well & sauté for 5 minutes or until the meat has browned.
* Add in water & press cancel on your Instant Pot.
* Secure the lid & pressure cook for 45 minutes. Turn the vent to sealing.
* Once done, press cancel & release the pressure.
* Add in the rice, do not stir, use the back of a spoon to spread the rice evenly.
* Cut a whole head of garlic in half & place the cut side down in the center of the pot.
* Secure the lid & pressure cook for 45 minutes.
* Once done, do not press cancel. Allow it to natural release for 15 minutes.
* Once the 15 minutes are over, press cancel & release the excess pressure.
* You may discard the garlic or squeeze it in for extra flavour.
* Mix throughly & plate.
* The beef should be tender & the rice should be throughly cooked.
* Garnish with fresh or dried parsley & enjoy!

Spicy Sesame Noodles 🌶️🌶️ The sauce is creamy, spicy, salty and slightly sweet... it's truly addictive 🫶🏼 I've been having this on repeat for months now instead of peanut noodles and it's so good!! Also I usually add some greens and tofu on top for a complete meal 🌱

Ingredients:
1 serve flat thick wheat noodles
1.5 tbsp tahini or chinese sesame paste
1/2-1 tbsp chilli oil/crisp (adjust to taste)
3 tsp light soy sauce
1 tsp dark soy sauce (for colour, can replace with light soy sauce instead)
1 tsp sesame oil
1/2 tsp rice wine vinegar
1 tsp sugar

Method
1. Cook noodles according to packet instructions. When done, drain and reserve 1 tbsp of the cooking liquid.
2. In the meantime, add all of the remaining ingredients into a bowl and whisk well to make your sauce.
3. Add your cooked noodles and 1 tbsp of the cooking water to the sauce. Toss through until noodles are well coated.
4. Garnish with sesame seeds, green onion and more chilli oil. Serve with your fav protein + greens and enjoy!

**For the Amba (mango condiment):**

1. 2 mangoes, peeled & diced

4. 1 ½ tsp black mustard seeds

6. ¾ tsp ground fenugreek
7. 1 tsp ground cumin
8. 1 tsp sumac
9. ½ tsp cayenne pepper (or to taste)
10. Juice of ½ lime
11. \~1 cup water (add as needed)

**For the sandwiches:**
13\. \~1 lb leftover roast chicken, b***d & torn into strips
14\. 8 slices sourdough or crusty bread
15\. 4 Tbsp mayonnaise

18\. Lettuce or arugula leaves
19\. ½ Vidalia onion, thinly sliced

# # # 👩🍳 Directions

**Step 1 – Prep the mango**
Mix diced mango with salt in a nonreactive bowl. Cover & refrigerate overnight.

**Step 2 – Make the amba**
Heat oil in a saucepan over medium. Add mustard seeds; when they pop, stir in chili, mango, fenugreek, cumin, sumac, cayenne, brown sugar, and lime juice. Add \~¼ cup water and simmer, stirring occasionally and adding water as needed, until mango is tender and sauce is thickened. Set aside to cool.

**Step 3 – Mix lime mayo**
Stir mayo with lime juice and cumin until smooth. Spread on each slice of bread.

**Step 4 – Assemble sandwiches**
Layer chicken, tomato slices, onion, lettuce, and a dollop of amba on 4 slices of bread. Top with remaining slices, press lightly, and serve!

Salmon Crispy Rice Salad
Spicy, crunchy, creamy🍚🥗


Ingredients: (2 servings)

For the crispy rice:
• 200-250gr cooked rice
• 2 tbsp soy sauce
• 2 tbsp sriracha
• 1 tbsp sesame oil

For the salmon:
• 1 salmon fillet
• Olive oil
• 1 tbsp garlic powder
• 1 tbsp chili flakes
• ½ tbsp black pepper
• ½ tbsp salt
• A little butter for cooking

For the spicy peanut sauce:
• 3 tbsp peanut butter
• 2 tbsp sriracha
• 1 tbsp honey
• Juice of ½ lemon
• 2 garlic cloves, minced
• 1 tbsp rice vinegar
• 1 tsp white sesame seeds
• ½ glass of hot water

For the salad:
• Cucumber (chopped)
• Green onions (chopped)
• Fresh coriander
• Edamame
• Red bell pepper (diced)
• Dill
• Avocado (sliced)
• Roasted peanuts (crushed)



👩🍳 Instructions:

1️⃣ Make the crispy rice:
Spread the cooked rice in a baking dish.
Mix with soy sauce, sriracha and sesame oil.
Bake at 190°C / 375°F for 30–35 minutes until crispy.

2️⃣ Prepare the salmon:
Rub the salmon with olive oil and seasoning mix (garlic powder, chili flakes, black pepper, salt).
Cook in a pan with a little butter until golden and flaky.

3️⃣ Make the sauce:
In a bowl, mix peanut butter, sriracha, honey, lemon juice, garlic, rice vinegar, sesame seeds and hot water. Stir until smooth.

4️⃣ Assemble the salad:
In two bowls, divide the crispy rice and all other ingredients evenly.
Top with the cooked salmon and drizzle the peanut sauce generously.

A bold, fiery seafood pasta that’s packed with flavor—tender calamari tossed in a garlicky, peppery tomato sauce with a hint of white wine. Perfect for spice lovers!

Serves: 4
Prep Time: 10 mins
Cook Time: 25 mins

🛒 Ingredients

12 oz spaghetti or linguine

1 lb calamari rings & tentacles

3 tbsp olive oil

4 cloves garlic, minced

½ tsp red pepper flakes (adjust to taste)

½ cup dry white wine

1 can (14.5 oz) crushed tomatoes

1 tbsp tomato paste

Salt & black pepper, to taste

¼ cup fresh parsley, chopped

Optional: 1 tsp smoked paprika

👩🍳 Instructions

Step 1 – Cook Pasta
Bring salted water to a boil. Cook pasta until al dente. Drain, saving ½ cup pasta water.

Step 2 – Sauté Calamari
Heat olive oil in a skillet. Add garlic & red pepper flakes, sauté 30 sec. Add calamari, cook 2–3 mins until tender. Remove & set aside.

Step 3 – Make the Sauce
Deglaze skillet with white wine, let reduce by half. Stir in crushed tomatoes, tomato paste, smoked paprika, salt & pepper. Simmer 8–10 mins.

Step 4 – Combine & Serve
Toss pasta & calamari into sauce, adding pasta water if needed. Garnish with parsley & extra chili flakes. Serve hot with crusty bread.
