# # # 🥭 Chicken-Amba Sandwiches with Lime Mayonnaise
Leftover roast chicken just got a major upgrade! 🍗✨ These sandwiches layer tender chicken with spicy-sweet mango amba, lime-cumin mayo, crisp lettuce, and fresh tomato on sourdough bread. A tangy, bold bite that’s impossible to resist!

# # # 🛒 Ingredients
**For the Amba (mango condiment):**
1. 2 mangoes, peeled & diced
2. 1 tsp kosher salt
3. 2 Tbsp safflower oil
4. 1 ½ tsp black mustard seeds
5. 1 red chili pepper (Fresno), minced
6. ¾ tsp ground fenugreek
7. 1 tsp ground cumin
8. 1 tsp sumac
9. ½ tsp cayenne pepper (or to taste)
10. Juice of ½ lime
11. \~1 cup water (add as needed)
12. 2 Tbsp packed brown sugar
**For the sandwiches:**
13\. \~1 lb leftover roast chicken, b***d & torn into strips
14\. 8 slices sourdough or crusty bread
15\. 4 Tbsp mayonnaise
16\. 1 tsp ground cumin
17\. 1 tsp lime juice
18\. Lettuce or arugula leaves
19\. ½ Vidalia onion, thinly sliced
20\. Tomato slices

# # # 👩🍳 Directions
**Step 1 – Prep the mango**
Mix diced mango with salt in a nonreactive bowl. Cover & refrigerate overnight.
**Step 2 – Make the amba**
Heat oil in a saucepan over medium. Add mustard seeds; when they pop, stir in chili, mango, fenugreek, cumin, sumac, cayenne, brown sugar, and lime juice. Add \~¼ cup water and simmer, stirring occasionally and adding water as needed, until mango is tender and sauce is thickened. Set aside to cool.
**Step 3 – Mix lime mayo**
Stir mayo with lime juice and cumin until smooth. Spread on each slice of bread.
**Step 4 – Assemble sandwiches**
Layer chicken, tomato slices, onion, lettuce, and a dollop of amba on 4 slices of bread. Top with remaining slices, press lightly, and serve!
