Berry Spinach Salad
A fresh and vibrant salad that combines sweet berries, crunchy pecans, tangy feta cheese, and baby spinach, all tossed in a simple honey-balsamic vinaigrette. Perfect as a light lunch or a refreshing side dish.
Ingredients:
6 cups fresh spinach
1 cup fresh blueberries
1 cup fresh strawberries, sliced
1/2 cup pecans, toasted
1/2 cup crumbled feta cheese
1/3 cup olive oil
1/4 cup honey balsamic vinegar
1 garlic clove, minced
Directions:
Toast the pecans in a skillet over medium-low heat until fragrant and lightly golden. Allow them to cool.
In a large salad bowl, combine the spinach, blueberries, sliced strawberries, toasted pecans, and feta cheese.
In a small bowl, whisk together the olive oil, honey balsamic vinegar, and minced garlic until well blended.
Pour the dressing over the salad and gently toss until evenly coated.
Serve immediately and enjoy.
