Brown Butter Chocolate Chip Cookie Bars
Ingredients
1 cup (226 g) unsalted butter
1 cup (200 g) packed brown sugar
½ cup (100 g) granulated sugar
2 large eggs
2 teaspoons vanilla extract
2¼ cups (280 g) all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1½ cups (255 g) chocolate chips
½ cup (85 g) chopped chocolate, optional
Flaky sea salt, for topping
Instructions
Brown the butter: Melt the butter in a saucepan over medium heat. Continue cooking, stirring frequently, until it becomes golden brown and smells nutty. Remove from heat and let cool for about 10–15 minutes.
Mix the sugars: Pour the browned butter into a large bowl. Whisk in the brown sugar and granulated sugar until smooth.
Add eggs and vanilla: Whisk in the eggs one at a time, then add the vanilla.
Add dry ingredients: In a separate bowl, combine flour, baking soda, and salt. Gradually stir the dry mixture into the wet mixture until just combined. Don't overmix.
Add chocolate: Fold in the chocolate chips and chopped chocolate.
Prepare the pan: Line a 9×13-inch baking pan with parchment paper. Press the dough evenly into the pan.
Bake: Bake at 350°F (175°C) for about 22–28 minutes, until the edges are golden brown and the center is just set. Don't overbake if you want soft, chewy bars.
Finish: Immediately sprinkle with flaky sea salt if desired. Let the bars cool completely before slicing.
Tip
For extra gooey cookie bars, slightly underbake them—the center should still look soft when you remove the pan from the oven.
