*Garlic Butter Cod with Cherry Tomatoes*
*Ingredients*
*Serves*: 3-4
*For the Fish*:
- 4 cod fillets, about 6 oz each - or haddock, halibut, or tilapia
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- 1 tbsp butter
*For the Garlic Butter Tomato Sauce*:
- 3 tbsp butter
- 4 garlic cloves, minced
- 1 cup cherry tomatoes, halved - mix red + yellow if you have them
- ¼ cup dry white wine or chicken broth
- 2 tbsp fresh lemon juice
- Zest of 1 lemon
- ¼ cup fresh parsley, chopped
- 2 tbsp fresh basil, torn
- Pinch of red pepper flakes - optional
*Method*
1. *Season Fish*: Pat cod fillets dry. Season both sides with salt and pepper.
2. *Sear*: Heat 2 tbsp olive oil + 1 tbsp butter in a large skillet over medium-high heat. Add fish and sear 3-4 min per side until golden and just cooked through. Remove and set aside on a plate.
3. *Make Sauce*: In the same pan, add 3 tbsp butter. Add garlic and red pepper flakes. Sauté 30 sec until fragrant.
4. *Add Tomatoes*: Add cherry tomatoes and cook 2-3 min until they start to burst. Pour in wine/broth, lemon juice, and lemon zest. Simmer 2 min to reduce slightly.
5. *Finish*: Return fish to the pan. Spoon sauce over the top. Add parsley and basil. Cook 1 more min. Serve immediately with sauce drizzled over.
