🌮 Strawberry Crunch Cheesecake Tacos 🌮
Ingredients
For the Taco Shells
5 large (burrito-size) flour tortillas
1 tablespoon unsalted butter, melted
13 ounces white chocolate, chopped or broken into small pieces
2 cups strawberry crunch topping
For the Cheesecake Filling
8 ounces cream cheese, softened to room temperature
½ cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream, very cold
For the Topping & Assembly
⅔ cup strawberry syrup
2 cups fresh strawberries, hulled and sliced or diced
Instructions
1. Prepare the tortilla shells
Preheat your oven to 350°F. Using a 4-inch round cookie cutter, cut 3 circles from each large tortilla (you should have 15 circles total).
Place a muffin tin upside down – the cups will act as molds. Lightly brush both sides of each tortilla circle with the melted butter. Drape each buttered circle over the inverted muffin cups, gently pressing to form a taco shell shape.
Bake for 5 to 6 minutes, until the edges are golden and crisp. Remove from the oven, let them cool in the pan for 1 minute, then carefully transfer the shells to a wire rack to cool completely.

2. Melt the white chocolate
Set up a double boiler: fill a small saucepan with 1 inch of water and bring to a simmer. Place a heatproof bowl with the chopped white chocolate over the pot, ensuring the bowl does not touch the water. Stir constantly with a rubber spatula until the chocolate is fully melted and smooth.
Microwave option: Heat in a microwave-safe bowl in 20-second bursts, stirring well after each interval, until melted. Be cautious – white chocolate scorches easily.
Remove from heat and wipe any moisture from the bottom of the bowl to keep water out of the chocolate.

3. Coat the shells
Using a pastry brush, generously coat both the inside and outside of each cooled tortilla shell with the melted white chocolate.
Immediately place each coated shell into a shallow bowl filled with the strawberry crunch topping. Use a spoon or your fingers to press the crumbs onto all surfaces, ensuring an even coating.
Transfer the coated shells to a parchment-lined baking sheet and let them stand at room temperature until the chocolate is completely set and firm, about 15 to 20 minutes.

4. Make the cheesecake filling
In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract with an electric mixer on medium speed until completely smooth and lump-free, about 2 minutes.
In a separate chilled bowl, whip the cold heavy cream with a mixer on high speed until stiff peaks form – the cream should hold its shape when the beaters are lifted.
Gently fold the whipped cream into the cream cheese mixture using a spatula, mixing just until combined and smooth. Do not overmix, or the filling will become dense. Transfer the filling to a piping bag fitted with a large round tip (or simply snip off the end).

5. Assemble the tacos
Stand the coated shells upright in a 9x13-inch baking dish or a turned-over muffin tin to keep them stable. Pipe the cheesecake filling evenly into each shell, filling them to the top.
Arrange the sliced fresh strawberries over the filling, then drizzle generously with strawberry syrup.

6. Chill and serve

1½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter (1 stick), melted and slightly cooled

1 cup creamy peanut butter
1 cup powdered sugar
1 cup heavy whipping cream
1 teaspoon vanilla extract
½ cup chopped Reese's Peanut Butter Cups
For the Topping
½ cup creamy peanut butter
Additional chopped Reese's Peanut Butter Cups (about 2–3 candies), for garnish
Instructions
1. Make the crust
In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir thoroughly with a fork or rubber spatula until the mixture is evenly moistened and resembles wet sand – all crumbs should be coated and no dry patches remain.
Transfer the crumb mixture to a 9-inch pie pan (standard depth, not deep-dish). Using the flat bottom of a dry measuring cup or a glass, press the crumbs firmly and evenly into the bottom of the pan, then work your way up the sides, creating a compact, uniform layer about ¼-inch thick. Pay extra attention to the corner where the bottom meets the sides – press firmly to avoid crumbling later.
Place the crust in the refrigerator to chill for at least 15 minutes while you prepare the filling. This helps it set and prevents it from absorbing moisture from the filling.

2. Prepare the peanut butter base
In a large mixing bowl, combine the room-temperature peanut butter and the sifted powdered sugar. Beat with an electric mixer on medium speed for 2 to 3 minutes, scraping down the sides and bottom of the bowl halfway through. The mixture should become smooth, thick, and completely uniform – no lumps of sugar or streaks of peanut butter should remain.

3. Whip the cream
In a separate large, chilled mixing bowl (place it in the freezer for 5 minutes beforehand if possible), pour in the cold heavy cream and add the vanilla extract. Beat with an electric mixer on high speed. After about 1 minute, the cream will start to thicken. Continue beating for 2 to 3 more minutes until stiff peaks form – when you lift the beaters, the cream should stand up in firm, sturdy peaks that do not flop over. Be careful not to over-beat, or the cream will start to separate into butter.

4. Combine the filling
Using a large rubber spatula, gently fold one-third of the whipped cream into the peanut butter mixture to lighten it. Fold with a sweeping motion from the bottom of the bowl up and over the top, rotating the bowl as you go. Once this first addition is mostly incorporated, add the remaining whipped cream and continue folding gently until the mixture is uniform in color and no white streaks remain – this should take about 10 to 12 gentle folds. Do not stir or beat, as this will deflate the cream and make the filling dense.
Gently fold in the ½ cup of chopped Reese's Peanut Butter Cups until they are evenly distributed throughout the filling, about 5 to 6 folds.

5. Assemble and chill
Remove the chilled crust from the refrigerator. Spoon the filling into the crust, piling it slightly higher in the center if desired. Use an offset spatula or the back of a large spoon to smooth the top into an even, level surface.
Refrigerate the pie uncovered for at least 4 hours, or preferably overnight. The filling is fully set when it is firm to the touch and does not jiggle when the pan is gently shaken. Do not rush this step – a properly chilled pie slices cleanly and holds its shape.

6. Add the topping
Just before serving, prepare the peanut butter drizzle. Place the remaining ½ cup of peanut butter in a microwave-safe bowl. Microwave in 15-second intervals on high power, stirring vigorously after each interval, until the peanut butter is completely melted, smooth, and pourable – this usually takes 45 to 60 seconds total.
Transfer the melted peanut butter to a small piping bag with a tiny hole snipped in the tip, or to a resealable plastic bag with one corner cut off. Drizzle the melted peanut butter over the top of the chilled pie in a decorative zigzag or crosshatch pattern, covering the surface evenly.
Immediately sprinkle the additional chopped Reese's Peanut Butter Cups over the drizzle while it is still wet, so they adhere. If you prefer, you can also add a sprinkle of flaky sea salt for a salty-sweet contrast.

7. Serve
For clean, professional-looking slices, fill a tall glass with hot water. Dip a sharp, thin-bladed knife into the hot water, wipe it dry with a clean kitchen towel, and make one firm, downward cut through the pie. Wipe the blade clean and repeat for each slice, re-dipping in the hot water as needed.
Serve the pie chilled, directly from the refrigerator. It pairs beautifully with a scoop of vanilla ice cream or a dollop of extra whipped cream for an even more indulgent treat.
